In a separate bowl, take oil. Add eggs, one at a time, beating well after each addition. 5. Stir in shredded carrots and zucchini and spinach. 6. Add flour mixture and beat on low until combined. 7. Pour batter in the prepared muffin tray and bake 20 to 22 minutes or until golden and a wooden pick comes out clean. Notes : i. Make sure to drain any water from shredded vegetables. ii. You may use other vegetables such as kale, sweet pea, corn, etc. per your taste and liking.
